2 cups all-purpose flour

1 tablespoon baking powder

1/4 cup cold unsalted butter, cut into small pieces

1/4 cup maple syrup (plus extra for glazing)

1/2 cup buttermilk (or milk with a splash of vinegar for a buttermilk substitute)

1 large egg

1 teaspoon vanilla extract

Optional: sesame seeds or chopped pecans for topping

Preheat the oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon until well combined.

      Incorporate butter: Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingertips, blend the butter into the flour until the mixture resembles coarse crumbs.

        Combine wet ingredients: In a separate bowl, whisk together the sweet potato, buttermilk, egg, maple syrup, and vanilla extract until smooth.

          Combine wet and dry: Pour the wet ingredients into the dry mixture. Stir gently with a spatula or wooden spoon until just combined. Do not overmix—some lumps are okay.
