1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tbsp unsalted butter

1/4 cup pure maple syrup

1 tbsp olive oil

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

1/2 tsp sea salt

1/4 tsp black pepper

Optional: A sprinkle of chopped fresh parsley for garnish

Prep the Carrots: If you’re using regular carrots, peel them and cut them into even sticks about 3 inches long. If you’re using baby carrots, rinse them under cold water.

    Boil the Carrots: In a medium saucepan, bring salted water to a boil. Add the carrots and cook for about 5-7 minutes until they are tender but still crisp. Drain and set aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Once melted, add the olive oil, maple syrup, thyme, salt, and black pepper. Stir to combine and allow the mixture to simmer for about 2-3 minutes, letting the flavors meld together.
