Ingredients

1 lb baby carrots (trimmed and peeled)

1/4 cup pure maple syrup

2 tbsp unsalted butter

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp ground cinnamon

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1/4 cup chopped pecans (optional)

Instructions

Prep the Carrots: Begin by washing and peeling the baby carrots. If using larger carrots, cut them into uniform 2-inch pieces to ensure even cooking.

Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat until the butter melts and begins to bubble.

Cook the Carrots: Add the baby carrots to the skillet, tossing them to coat in the butter and oil. Sprinkle with salt, black pepper, and ground cinnamon. Sauté the carrots for about 5-7 minutes until they start to become tender.

Glaze with Maple Syrup: Pour the maple syrup over the carrots, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for an additional 5-10 minutes, stirring occasionally, until the carrots are glazed and easily pierced with a fork.

Add Fresh Herbs: Just before serving, stir in fresh thyme leaves for added flavor. If desired, sprinkle chopped pecans on top for a delightful crunch and nutty flavor.

Serve Warm: Transfer the glazed carrots to a serving dish, showcasing their shiny, caramelized exterior. Enjoy this sweet and savory side dish with your favorite protein!
