Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith for tartness)

½ cup chopped pecans or walnuts (optional)

For the Maple Glaze:

1 cup powdered sugar

¼ cup pure maple syrup

1 tablespoon unsalted butter, melted

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy using an electric mixer. This should take about 3 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, beat in the vanilla extract.

Combine Ingredients: Gradually alternate adding the dry ingredients and buttermilk to the butter mixture. Start and end with the flour mix. Mix until just combined.

Fold in Apples and Nuts: Gently fold in the diced apples and, if using, the chopped pecans or walnuts until evenly distributed in the batter.

Transfer to Bundt Pan: Pour the batter into the prepared Bundt pan and smooth the top with a spatula.

Bake the Cake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. As the cake bakes, you’ll enjoy the delightful aroma wafting through your kitchen!

Cool the Cake: Allow the cake to cool in the pan for about 15-20 minutes. Then, carefully invert it onto a wire rack to cool completely.

Prepare the Maple Glaze: In a small bowl, whisk together the powdered sugar, maple syrup, melted butter, vanilla extract, and pinch of salt until smooth. Adjust the consistency with more maple syrup or powdered sugar if needed.

Glaze the Cake: Once the Bundt cake is completely cool, drizzle the maple glaze over the top, allowing it to drip down the sides.

Serve and Enjoy: Slice the cake into wedges and serve. This cake pairs perfectly with a cup of coffee or herbal tea!
