Ingredients

2 lbs chicken wings

1 cup fresh mango puree (about 2 ripe mangoes)

2 tablespoons honey

2 tablespoons soy sauce

1-2 habanero peppers, finely chopped (adjust for heat preference)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon vegetable oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prep the Wings: Preheat your oven to 400°F (200°C). Pat the chicken wings dry with paper towels, and place them in a large bowl. Drizzle with vegetable oil, season with salt and black pepper, and toss until evenly coated.

Bake the Wings: Arrange the wings in a single layer on a baking sheet lined with parchment paper. Bake for 40-45 minutes, flipping halfway, until they are crispy and golden brown.

Make the Glaze: While the wings are baking, prepare the mango habanero glaze. In a saucepan over medium heat, combine the mango puree, honey, soy sauce, chopped habanero peppers, minced garlic, grated ginger, and lime juice. Stir until well combined.

Simmer the Glaze: Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly. Taste and adjust seasoning if necessary (add more honey for sweetness or more habanero for heat).

Glaze the Wings: Once the wings are done baking, remove them from the oven and transfer them to a large mixing bowl. Pour the mango habanero glaze over the wings while still hot, tossing them until they are well coated.

Final Bake: Return the glazed wings to the baking sheet and bake for an additional 5-10 minutes to allow the glaze to set and caramelize slightly.

Serve: Remove from the oven and let cool for a minute. Plate the wings and garnish with fresh chopped cilantro and lime wedges. Serve hot, and enjoy the sweet heat!
