Chia pudding is a simple yet versatile dish that has taken the culinary world by storm, particularly among health enthusiasts. Originating from the ancient Aztec and Mayan civilizations, chia seeds were once considered a staple food due to their remarkable nutritional profile. The seeds are known for their ability to absorb liquid, swelling into a gel-like consistency when soaked. This unique feature is what gives chia pudding its creamy texture without the need for dairy products.

Ingredients

1 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons maple syrup or honey (adjust to taste)

1/2 teaspoon vanilla extract

1 ripe mango, diced

1/4 cup unsweetened shredded coconut

Fresh mint leaves for garnish (optional)

Instructions

Combine the Base: In a medium mixing bowl, whisk together the coconut milk, chia seeds, maple syrup (or honey), and vanilla extract until well combined.

Let It Set: Cover the bowl and refrigerate for at least 2 hours or overnight. This allows the chia seeds to absorb the liquid and expand, creating a pudding-like consistency.

Prepare the Mango: While the chia pudding is setting, peel and dice the ripe mango into small cubes.

Mix in the Mango: Once the chia pudding is ready, gently fold in half of the diced mango into the pudding mixture.

Assemble the Pudding: Spoon the chia pudding into serving bowls or glasses. Top with the remaining mango and sprinkle with shredded coconut.

Garnish & Serve: Add a few fresh mint leaves on top for a burst of color and extra freshness. Enjoy your Tropical Bliss Mango Coconut Chia Pudding immediately or chill for a refreshing dessert!
