4 medium zucchinis, sliced into thin rounds

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

3 large eggs

½ cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.

    Prepare the zucchini: In a large bowl, toss the sliced zucchinis with a little salt and let them sit for about 10 minutes to extract moisture. Afterward, drain any excess water.

      Sauté the aroma: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Combine the filling: In a mixing bowl, whisk together the eggs, heavy cream, oregano, basil, red pepper flakes, salt, and pepper until well combined. Add the sautéed onions and garlic, and mix it into the egg mixture.

          Layer the ingredients: In the prepared baking dish, begin by spreading half of the zucchini slices evenly across the bottom. Sprinkle with half of the cherry tomatoes and half of the mozzarella cheese. Pour half of the egg mixture over the top. Repeat the layers with the remaining ingredients. Finish with the Parmesan cheese sprinkled evenly over the top.

            Bake: Cover the casserole with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
