1 lb ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes (with their juice)

1 can (6 oz) tomato paste

1 cup pepperoni slices

2 cups shredded mozzarella cheese

1 tsp Italian seasoning

1 tsp dried oregano

Salt and pepper to taste

1 cup sliced mushrooms (optional)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground turkey (or beef) until fully cooked. Drain any excess fat.

      Sauté Vegetables: Add the diced onion, garlic, and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are soft, about 5-7 minutes. If using mushrooms, add them now and sauté for an additional 3-4 minutes.

        Add Tomatoes and Seasoning: Stir in the diced tomatoes (with juice), tomato paste, Italian seasoning, oregano, salt, and pepper. Mix well and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.

          Layer the Casserole: In a greased 9x13 inch casserole dish, spread half of the meat mixture at the bottom. Layer half of the pepperoni slices on top, followed by half of the mozzarella cheese. Repeat the layers with the remaining meat mixture, pepperoni, and mozzarella cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from oven and let it cool for a few minutes. Garnish with fresh basil if desired. Slice and serve warm.
