Low-Carb Bacon Cheeseburger Casserole

1 pound ground beef

4 slices of bacon, diced

1 small onion, diced

2 cloves garlic, minced

1 cup cauliflower rice

1 cup shredded cheddar cheese

1/4 cup mayonnaise

2 large eggs

2 tablespoons mustard

1 teaspoon Worcestershire sauce

Salt and pepper to taste

1/4 cup dill pickles, chopped (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and place it on a paper towel to drain the excess fat, leaving about 1 tablespoon in the skillet.

      Brown the Beef: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until softened. Then, add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.

        Combine Ingredients: In a large bowl, combine the cooked beef mixture, cauliflower rice, crispy bacon, shredded cheddar cheese, mayonnaise, eggs, mustard, Worcestershire sauce, salt, and pepper. Mix well until all ingredients are fully combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x9-inch (or similar size) baking dish, spreading it evenly.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is slightly golden.

              Cool and Serve: Allow the casserole to cool for a few minutes before slicing. Top with chopped dill pickles if desired and serve warm.
