2 medium-sized lobsters (about 1.5 lbs each)

4 cups seafood stock

1 cup heavy cream

4 slices of bacon, diced

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 cup corn kernels (fresh or frozen)

1 cup diced celery

1 teaspoon fresh thyme leaves

1 teaspoon smoked paprika

Salt and pepper, to taste

Chopped fresh parsley, for garnish

Instructions
 

Cook the Lobster: Bring a large pot of salted water to a boil. Carefully add the lobsters and cook for about 8-10 minutes, or until they turn bright red. Remove the lobsters and let them cool. Once cool, pick the meat from the tails and claws, and chop it into bite-sized pieces. Set aside the lobster meat and save the shells.

    Make the Broth: In a large pot, heat the diced bacon over medium heat until crispy. Remove and drain on paper towels, leaving the fat in the pot. Add the onions, celery, and garlic. Sauté for about 5 minutes until the onions have softened.

      Add Potatoes and Stock: Add the diced potatoes to the pot, followed by the seafood stock and the reserved lobster shells. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.

        Combine Ingredients: Once the potatoes are cooked, remove the lobster shells from the pot. Stir in the fresh thyme, smoked paprika, corn, and heavy cream. Let it simmer for another 5 minutes.

          Add Lobster: Gently fold in the lobster meat and let it warm through. Season with salt and pepper to taste.

            Serve: Ladle the chowder into bowls and garnish with crispy bacon and chopped parsley.
