12 oz rotini pasta

1 lb ground beef

1 cup sweet corn (frozen or canned, drained)

1 cup sharp cheddar cheese, shredded

1 packet (1 oz) ranch seasoning mix

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup milk

1/2 cup green onions, chopped (plus extra for garnish)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tbsp olive oil

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: In a large pot of boiling salted water, cook rotini according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

      Brown the Beef: In a skillet over medium heat, add the olive oil. Once hot, add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

        Mix in Veggies and Seasoning: Return the cooked beef to the skillet. Add sweet corn, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Stir to combine and heat through for about 2 minutes.

          Create the Creamy Mixture: In a large mixing bowl, combine softened cream cheese, sour cream, and milk. Whisk until smooth. Add in 1/2 cup of shredded cheddar and chopped green onions. Mix until well combined.

            Combine All Ingredients: Add the cooked rotini and beef mixture to the creamy mixture. Stir until everything is evenly coated.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly.
