Loaded Baked Potato with Steak Bites

Ingredients
  

4 medium russet potatoes

1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup crispy bacon bits

1 tablespoon unsalted butter

Optional: Fresh chives for garnish

Instructions
 

Bake the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Scrub the russet potatoes under cold water to remove any dirt. Pat them dry with a towel.

        - Prick each potato with a fork several times, then rub them with olive oil and sprinkle with salt.

          - Place the potatoes directly on the oven rack or on a baking sheet lined with foil for easy cleanup.

            - Bake for about 45-60 minutes, or until the skin is crispy and a fork easily pierces through the potato.

              Prepare the Steak Bites:

                - While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.

                  - Add the steak cubes to the skillet and season with garlic powder, onion powder, salt, and pepper.

                    - Cook the steak bites for about 3-4 minutes, stirring occasionally until they're browned on all sides and cooked to your liking (medium-rare is about 130°F/54°C, medium is about 140°F/60°C).

                      - Remove from heat and let rest for a couple of minutes.

                        Assemble the Loaded Potatoes:

                          - Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

                            - Cut a slit down the center of each potato and gently squeeze the ends to open them up.

                              - Add a tablespoon of butter to each potato, allowing it to melt, then fluff the insides with a fork.

                                - Top each potato generously with shredded cheddar cheese, returning them to the oven for 5 minutes or until melted.

                                  Finish & Serve:

                                    - Carefully remove the potatoes from the oven again.

                                      - Spoon the cooked steak bites on top of the melted cheese.

                                        - Add sour cream, crispy bacon bits, and chopped green onions as desired.

                                          - Optionally, garnish with fresh chives for an extra burst of flavor and a pop of color.
