4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded cheddar cheese, plus more for garnishing

1/2 cup sour cream

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (add more to taste)

5 slices of bacon, cooked and crumbled

2 green onions, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

Prepare the Potatoes: In a large pot, bring diced potatoes, chopped onion, and minced garlic to a medium-high heat. Add olive oil and sauté for about 5 minutes until the onions are translucent.

    Add Broth: Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce the heat to medium-low, cover, and simmer for about 15-20 minutes, or until the potatoes are tender.

      Blend the Soup: Using an immersion blender, blend the soup until smooth. For a chunkier texture, blend half of the soup, then mix it back in.
