For the Lime Cilantro Slaw:

3 cups green cabbage, thinly shredded

1 cup red cabbage, thinly shredded

1 cup carrots, julienned

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup mayonnaise

2 tablespoons fresh lime juice

1 tablespoon honey

1 teaspoon apple cider vinegar

Salt and pepper to taste

For the Tacos:

8 small corn tortillas

1 pound grilled chicken breast, sliced (or your choice of protein)

1 avocado, sliced

Lime wedges, for serving

Extra cilantro for garnish

Instructions
 

Prepare the Slaw:

    - In a large mixing bowl, combine the shredded green cabbage, red cabbage, carrots, cilantro, and green onions. Toss well to mix all the vegetables.

      - In a separate small bowl, whisk together the mayonnaise, lime juice, honey, apple cider vinegar, salt, and pepper until smooth.

        - Pour the dressing over the cabbage mixture and toss until everything is well coated. Set aside to let the flavors meld while you prepare the tacos.

          Prepare the Tacos:

            - While the slaw sits, heat a skillet or grill over medium-high heat. If using corn tortillas, warm them slightly on the skillet for about 30 seconds per side until pliable. If you prefer, you can also char them slightly for added flavor.
