1 ½ cups all-purpose flour

½ cup granulated sugar

2 tablespoons poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar)

2 large eggs

Zest of 1 large lemon

½ cup fresh lemon juice (about 2 lemons)

1 teaspoon vanilla extract

Optional: 1 cup powdered sugar (for glaze)

Optional: 2 tablespoons lemon juice (for glaze)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt until evenly combined.

      Combine Wet Ingredients: In a separate bowl, mix the melted butter, buttermilk, eggs, lemon zest, lemon juice, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Fill Muffin Tins: Evenly divide the batter among the prepared muffin tins, filling each cup about 2/3 full.

            Bake: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden.

              Cool Muffins: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
