1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 tbsp poppy seeds

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

Zest of 2 lemons

¼ cup fresh lemon juice

½ cup plain yogurt (or sour cream)

1 tsp vanilla extract

Optional: Lemon glaze (1 cup powdered sugar + 2-3 tbsp fresh lemon juice)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well with cooking spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.

        Add Eggs & Flavor: Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, yogurt (or sour cream), and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to ensure a light texture.

            Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
