Ingredients

8 fresh sardines, cleaned and deboned

4 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon freshly cracked black pepper

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the olive oil, lemon zest, lemon juice, black pepper, sea salt, and garlic powder. Whisk until well blended.

Marinate the Sardines: Gently place the cleaned sardines into a large dish or a resealable plastic bag. Pour the marinade over the sardines, ensuring they are well coated. Cover the dish or seal the bag and let them marinate in the refrigerator for at least 30 minutes, up to 1 hour for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F or 190°C). If using a grill pan, heat it over medium heat on the stovetop.

Grill the Sardines: Remove the sardines from the marinade, allowing excess marinade to drip off. Carefully place them on the hot grill. Grill for 2-3 minutes on each side, or until the sardines are cooked through and have nice grill marks. Be gentle when flipping, as sardines can be delicate.

Serve: Once cooked, remove the sardines from the grill and arrange them on a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side.

Enjoy: Pair your grilled sardines with a light salad, crusty bread, or your favorite sides.
