1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup cooked quinoa (optional, for added texture)

1 large head of butter lettuce or romaine lettuce, leaves separated

1 avocado, diced

½ cup cherry tomatoes, halved

Fresh cilantro or parsley for garnish

1 tablespoon sesame seeds (optional)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp, olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Toss to coat the shrimp evenly. Let the shrimp marinate for 15-20 minutes for the flavors to meld.

    Cook the Shrimp: Preheat a large skillet over medium-high heat. Once hot, add the marinated shrimp, spreading them out in a single layer. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Be cautious not to overcook them.

      Prepare the Lettuce Wraps: While the shrimp is cooking, prepare your serving platter. Lay out the lettuce leaves, ensuring they are dry and pliable for wrapping.

        Assemble the Wraps: Once the shrimp are cooked, remove them from the heat. In each lettuce leaf, add a spoonful of quinoa (if using), a few shrimp, a few avocado pieces, and a couple of cherry tomato halves.
