For the Crust and Crumb Topping:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

¾ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Lemon Filling:

3 large eggs

1 cup granulated sugar

½ cup freshly squeezed lemon juice (about 3-4 lemons)

2 tablespoons all-purpose flour

Zest of 2 lemons

¼ teaspoon baking powder

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving some overhang to easily lift the bars out later.

    Make the Crust: In a medium bowl, whisk together the flour, sugar, and salt. Add in the melted butter and vanilla extract, and mix until combined. The mixture should be crumbly. Press about two-thirds of this mixture firmly into the bottom of the prepared baking pan to create a crust.

      Prepare the Filling: In a separate bowl, whisk together the eggs and granulated sugar until well combined. Add the freshly squeezed lemon juice, lemon zest, flour, and baking powder. Mix until smooth and well incorporated.

        Combine and Bake: Pour the lemon filling over the crust in the pan. Crumble the remaining crust mixture on top of the lemon filling.

          Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden and the filling is set. It should have a slight jiggle in the center.

            Cool and Slice: Allow the bars to cool in the pan for at least 20 minutes, then lift them out using the parchment paper overhang. Let them cool completely on a wire rack before slicing into squares.

              Serve: Optionally, dust with powdered sugar before serving for an extra touch of sweetness.
