Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

Zest of 1 large lemon

½ cup sour cream

1 ¼ cups fresh blueberries (lightly dusted with flour)

2 tablespoons lemon juice

For the Lemon Glaze:

1 cup powdered sugar

2 tablespoons lemon juice

1 teaspoon lemon zest

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan with parchment paper for easy removal.

Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 3-5 minutes).

Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and lemon zest.

Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the sour cream. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Fold in Blueberries: Carefully fold in the fresh blueberries while being gentle to avoid crushing them.

Add Lemon Juice: Pour in the lemon juice and give the mixture one last gentle fold.

Bake the Loaf: Pour the batter into the prepared loaf pan, smoothing the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Loaf: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Prepare the Lemon Glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. If the glaze is too thick, add a bit more lemon juice, one teaspoon at a time, until you reach the desired consistency.

Glaze the Loaf: Once the loaf is completely cool, drizzle the lemon glaze over the top.

Serve and Enjoy: Slice the loaf, serve, and savor the delightful combination of lemon and blueberry flavors!
