Lemon Blueberry Cookies (Soft and Chewy)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

Zest of 1 lemon

2 tbsp fresh lemon juice

1 cup fresh blueberries (or 3/4 cup dried blueberries)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, oats, baking soda, baking powder, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

        Add Wet Ingredients: Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.

          Mix Dry and Wet Mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Do not overmix.

            Fold in Blueberries: Gently fold in the blueberries, being careful not to break them (especially if using fresh).

              Scoop the Dough: Using a tablespoon or a cookie scoop, drop dollops of cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie.

                Bake: Bake in the preheated oven for 10-12 minutes or until the cookies are lightly golden around the edges but still soft in the center. They will firm up as they cool.

                  Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
