Lemon Blueberry Breakfast Muffins

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking soda

1 teaspoon baking powder

¼ teaspoon salt

⅓ cup unsalted butter, melted

1 large egg

¼ cup buttermilk (or milk with 1 teaspoon of vinegar)

1 tablespoon lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, if unavailable)

Optional: coarse sugar for topping

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, egg, buttermilk, lemon juice, lemon zest, and vanilla extract until smooth and fully integrated.

        Combine Both Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined. Be careful not to overmix; some lumps are perfectly fine!

          Fold in Blueberries: Gently fold in the blueberries, ensuring they're evenly distributed throughout the batter.

            Fill Muffin Cups: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle a little coarse sugar on top for added sweetness and texture.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden.

                Cool & Serve: Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature with a side of butter or your favorite jam.
