12 oz. pasta (spaghetti or fettuccine)

1 cup ricotta cheese

Zest of 1 lemon

Juice of 1 lemon

1/2 cup fresh basil leaves, chopped

2 tablespoons extra virgin olive oil

2 garlic cloves, minced

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Lemon wedges and additional basil for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Creamy Mixture: In a large mixing bowl, combine ricotta cheese, lemon zest, lemon juice, chopped basil, olive oil, and minced garlic. Mix until well combined and creamy.

      Combine Pasta and Sauce: Add the hot, drained pasta to the ricotta mixture. Toss gently to coat, adding reserved pasta water a little at a time until you reach your desired creaminess.
