1 lb ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (8 oz) corn, drained

1 cup salsa

1 cup sour cream

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced black olives (optional)

1/4 cup chopped green onions

Fresh cilantro for garnish (optional)

1 tsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

      Add Seasoning: Stir in the taco seasoning and a splash of water (as per packet instructions), cooking for an additional 2-3 minutes until well combined and fragrant.

        Prepare the Dish: In a 9x13-inch baking dish, start layering your ingredients. First, add half of the crushed tortilla chips to the bottom of the dish, spreading them out evenly.

          Layer Ingredients:

            - Spread half of the cooked meat mixture over the tortilla chips.

              - Spoon half of the black beans and corn evenly over the meat.

                - Drizzle half of the salsa over the beans and corn.

                  - Add half of the sour cream in dollops across the top.

                    - Sprinkle a layer of shredded cheddar cheese.

                      Repeat Layers: Repeat the layering process with the remaining ingredients: the rest of the tortilla chips, meat, black beans, corn, salsa, sour cream, and finish with the rest of the cheddar cheese.

                        Bake: Cover the baking dish with aluminum foil (to avoid browning too quickly) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                          Add Fresh Toppings: Once out of the oven, let the dish sit for 5 minutes. Top with diced tomatoes, sliced black olives (if desired), and chopped green onions. Garnish with fresh cilantro if using.

                            Serve: Cut into squares and serve warm. Enjoy with additional salsa or sour cream on the side!
