Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef or Italian sausage

1 (28-ounce) can crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

8 ounces lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

    Add the ground beef or Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.

      Pour in the crushed tomatoes and chicken or vegetable broth. Stir in the dried basil, oregano, and red pepper flakes, if using. Season with salt and pepper. Bring the mixture to a gentle boil.

        Once boiling, add the broken lasagna noodles. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the noodles are tender.

          While the soup is simmering, in a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season with a pinch of salt and pepper.

            Once the noodles are cooked, remove the pot from heat. To serve, ladle the soup into bowls and add a dollop of the ricotta mixture on top. Sprinkle the remaining mozzarella and Parmesan cheese over the soup.

              Optionally, garnish with fresh basil leaves for an extra touch of flavor and presentation. Serve hot with crusty bread or a side salad.
