Korean Street Toast (Gilgeori Toast)

4 slices of thick white bread

4 large eggs

1 cup of shredded cabbage

1 medium carrot, julienned

1 small onion, chopped

2 tablespoons vegetable oil

2 tablespoons sugar

1 tablespoon soy sauce

1 teaspoon salt

1/2 teaspoon black pepper

4 slices of cheese (American or Swiss)

Ketchup and mayonnaise (for serving)

Optional: sliced ham or bacon

Instructions
 

Prepare the Vegetables:

    In a mixing bowl, combine the shredded cabbage, julienned carrot, and chopped onion. Mix well and set aside.

      Make the Egg Mixture:

        In another bowl, crack the eggs and beat them lightly. Add sugar, soy sauce, salt, and black pepper to the eggs and whisk until well combined.

          Cook the Vegetables:

            Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the vegetable mixture and sauté for about 3-4 minutes, until softened. Remove from the skillet and set aside.

              Cook the Eggs:

                In the same skillet, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and ensure they cover the entire bottom of the skillet. Cook for about 2-3 minutes, or until the edges begin to set.

                  Combine Ingredients:

                    Once the eggs are cooked on the bottom, add the sautéed vegetable mixture on one half of the omelet. If using, add a slice of ham or bacon on top, then fold the other half of the omelet over the vegetables to create a half-moon shape. Allow it to cook for another 1-2 minutes until the cheese is melted.

                      Toast the Bread:

                        In a separate pan, lightly toast the slices of bread until golden brown on both sides.

                          Assemble the Toast:

                            Place the prepared egg omelet on one slice of toasted bread. Drizzle with ketchup and mayonnaise to taste, then top with another slice of bread. Press gently to secure.

                              Cut and Serve:

                                Slice the toast in half diagonally for easy eating. Serve warm with extra ketchup and mayonnaise on the side.
