For the Meatballs:

1 lb ground beef (or ground pork)

1/4 cup panko breadcrumbs

1/4 cup chopped scallions (green onions)

2 cloves garlic, minced

1 inch ginger, grated

1 tbsp soy sauce

1 tbsp gochujang (Korean chili paste)

1 tbsp sesame oil

1 tbsp brown sugar

1/2 tsp black pepper

1 egg, beaten

Sesame seeds, for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tbsp gochujang

1 tsp lime juice

1 tsp honey

1/4 tsp garlic powder

Preheat Your Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef, panko breadcrumbs, chopped scallions, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, brown sugar, black pepper, and the beaten egg. Mix everything until just combined; be careful not to overmix, as this can lead to tough meatballs.

      Form the Meatballs: Using your hands, roll the mixture into meatballs about 1 inch in diameter. Place the meatballs evenly spaced on the prepared baking sheet.

        Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 15–20 minutes, or until the meatballs are cooked through and browned on the outside. You can check if they’re done by cutting one in half; it should be cooked thoroughly.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, mix together the mayonnaise, gochujang, lime juice, honey, garlic powder, and a pinch of salt in a small bowl. Taste and adjust seasoning if necessary, adding more gochujang for more heat, if desired.

            Serve: Once the meatballs are finished baking, take them out of the oven. Let them cool for a few minutes before transferring them to a serving plate. Drizzle or sprinkle sesame seeds on top for garnish. Serve the warm meatballs with the spicy mayo dip on the side.
