1 pound kielbasa, sliced into 1/2-inch coins

2 cups baby potatoes, halved

1 red bell pepper, sliced

1 green bell pepper, sliced

1 large red onion, sliced into wedges

3 cups fresh broccoli florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare Vegetables: In a large bowl, combine the halved baby potatoes, sliced bell peppers, and onion. Drizzle with 2 tablespoons of olive oil, sprinkle with smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Toss well to coat.

      Arrange on Sheet Pan: Spread the vegetable mixture evenly across one side of the prepared sheet pan. On the empty side of the pan, arrange the sliced kielbasa.

        Roast the Meal: Place the sheet pan in the preheated oven and roast for about 25 minutes.

          Add Broccoli: After 25 minutes, remove the pan from the oven and add the broccoli florets to the pan. Drizzle with the remaining tablespoon of olive oil and toss lightly.

            Continue Roasting: Return the sheet pan to the oven and roast for an additional 15-20 minutes, or until the vegetables are tender and the kielbasa is slightly caramelized.
