Kielbasa Pierogi Bake

Ingredients
  

1 package (20 oz) frozen pierogi (potato and cheese or your favorite variety)

12 oz smoked kielbasa, sliced into rounds

1 medium onion, diced

3 cloves garlic, minced

1 cup sauerkraut, drained and rinsed

1 cup shredded sharp cheddar cheese

1 teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a bit of olive oil or cooking spray.

    Cook the Kielbasa: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced kielbasa and cook until it’s browned and slightly crispy, about 5-7 minutes. Remove the kielbasa from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

        Combine the Ingredients: In a large bowl, mix together the pierogi, sautéed onion and garlic, cooked kielbasa, sauerkraut, paprika, salt, and pepper. Make sure everything is well combined.

          Layer in the Baking Dish: Spoon half of the pierogi and kielbasa mixture into the bottom of the prepared baking dish. Sprinkle half of the shredded cheddar cheese on top. Add the remaining mixture on top and finish with the rest of the cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

              Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
