Ingredients

2 cups cooked shredded chicken

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup ranch dressing (preferably low-carb)

1/2 cup cooked bacon, crumbled

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 large low-carb tortillas (like cauliflower or almond flour)

Olive oil or cooking spray for baking

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare Filling: In a large mixing bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, ranch dressing, crumbled bacon, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix until all ingredients are well incorporated and creamy.

Assemble Taquitos: Place one low-carb tortilla on a flat surface. Spoon an adequate amount of the filling onto the tortilla (approximately 2-3 tablespoons). Roll the tortilla tightly around the filling, tucking in the sides as you go. Repeat this process for all tortillas.

Bake Taquitos: Place the rolled taquitos seam-side down on the prepared baking sheet. Lightly brush or spray the tops with olive oil or cooking spray to ensure they get crispy while baking.

Bake: Bake in the preheated oven for 20-25 minutes or until the taquitos are golden brown and crispy. Keep an eye on them to prevent burning.

Serve: Remove from the oven and let cool slightly. Serve the taquitos warm with extra ranch dressing or guacamole on the side for dipping.
