1 medium zucchini, grated (about 1 cup)

1 cup whole wheat flour

1/2 cup rolled oats

1/2 cup almond flour

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or grease it lightly.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. This helps to keep your muffins from being too wet.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, rolled oats, almond flour, baking powder, baking soda, cinnamon, nutmeg (if using), and salt until fully combined.

        Combine Wet Ingredients: In a separate bowl, beat the eggs, then add in the honey (or maple syrup), applesauce, and vanilla extract. Mix until well combined and creamy.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold in the grated zucchini and any optional ingredients if using (chopped nuts or chocolate chips). Be careful not to overmix; it’s okay if there are a few lumps.

            Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
