Ingredients
  

1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

1 can (16 oz) refried beans

1 can (8 oz) tomato sauce

1 cup corn (fresh or frozen)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup crushed tortilla chips

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

      Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 3-5 minutes.

        Stir in the diced tomatoes (with juices), refried beans, tomato sauce, corn, chili powder, cumin, salt, and black pepper. Mix until well combined.

          Spread the mixture into a greased 9x13-inch baking dish.

            Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

              Top with crushed tortilla chips for added crunch and flavor.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

                  Once done, remove from the oven and let it cool slightly before serving.

                    Garnish with fresh cilantro if desired and serve with a dollop of sour cream.
