1 lb ground turkey or beef

1 cup finely chopped onions

3 cloves garlic, minced

4-6 fresh jalapeños, diced (seeds removed for less heat if desired)

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese, plus more for topping

1 cup shredded pepper jack cheese

1 cup corn (fresh or frozen)

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

1 cup crushed tortilla chips

Fresh cilantro, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onions and minced garlic to the skillet. Sauté until translucent and fragrant, about 3-4 minutes.

        Add Jalapeños: Stir in the diced jalapeños and cook for another 2-3 minutes until they soften a bit.

          Blend the Sauces: Lower the heat and add the softened cream cheese, sour cream, cheddar cheese, pepper jack cheese, corn, chili powder, cumin, and season with salt and pepper. Mix until everything is well combined and creamy.

            Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the meat and cheese mixture in an even layer. Sprinkle half of the crushed tortilla chips over the top. Repeat with the remaining meat mixture and another layer of crushed chips.

              Top with Cheese: Sprinkle additional cheddar and pepper jack cheese over the top for a melty finish.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once it’s out of the oven, let it cool for about 5 minutes. Garnish with fresh chopped cilantro if desired, then serve warm.
