Irish Bacon, Cabbage, and Potato Soup

6 oz (170g) Irish bacon or smoked back bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, peeled and diced

1 small head of cabbage, chopped (about 4 cups)

4 cups chicken or vegetable broth

1 cup whole milk or cream

2 tablespoons olive oil

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot over medium heat, add the diced Irish bacon. Cook until it is crispy and browned, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the fat in the pot.

    Sauté Vegetables: In the same pot, add the olive oil if more fat is needed. Then, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

      Add Potatoes and Broth: Stir in the diced potatoes and cook for an additional 2 minutes. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to a simmer and cook for about 15 minutes, or until the potatoes are tender.

        Incorporate Cabbage: Add the chopped cabbage and fresh thyme to the pot. Continue to simmer for an additional 10 minutes, or until the cabbage is wilted and tender.

          Blend the Soup: If you prefer a creamy texture, use an immersion blender to blend a portion of the soup to create a creamy consistency, while leaving some chunks for texture. Alternatively, you can blend about half of the soup in a regular blender and return it to the pot.

            Add Dairy: Stir in the whole milk or cream, and then add the cooked bacon back into the pot. Season with salt and pepper to taste. Allow it to heat through for another 2-3 minutes.

              Serve: Ladle the soup into bowls and garnish with fresh parsley for a touch of color.
