1/2 cup brown sugar, packed

2 large eggs

1/3 cup milk

1 tsp vanilla extract

1 cup ripe peaches, peeled and diced (fresh or canned)

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1/4 cup honey

1 tsp vanilla extract

Pinch of salt

For Garnish:

Extra diced peaches

Drizzle of honey

Fresh mint leaves (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

    Make the Cupcake Batter:

      - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

        - Add in the eggs, one at a time, mixing well after each addition.

          - Stir in the milk and vanilla extract until fully combined.

            - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

              - Gradually add the dry ingredients to the wet ingredients, mixing just until combined (don’t overmix).

                - Fold in the diced peaches gently.

                  Bake the Cupcakes:

                    - Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                      - Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

                          - In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.

                            - Gradually add the powdered sugar, honey, vanilla extract, and a pinch of salt. Beat until the frosting is light and fluffy.
