1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup bell peppers (red, yellow, green), cut into 1-inch pieces

1 cup red onion, cut into 1-inch chunks

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes prior)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined. Add the chicken cubes to the marinade, ensuring all pieces are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a more pronounced flavor.

    Preheat the Grill: If using a grill, preheat it to medium-high heat (about 375-400°F or 190-200°C). If using a grill pan, heat it on the stove over medium-high heat.

      Prepare the Skewers: Thread the marinated chicken onto the skewers, alternating with pieces of bell peppers and red onion for added color and flavor. Aim for about 4-5 pieces of chicken per skewer, interspersing the veggies between them.

        Grill the Skewers: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The veggies should also be tender and slightly charred.

          Baste (Optional): If desired, during the last few minutes of cooking, brush any remaining marinade over the skewers for extra flavor and shine.
