1 pound boneless, skinless chicken breasts

1 cup quinoa

2 cups chicken broth (or water)

1 tablespoon olive oil

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup baby spinach

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Chicken Marinade:

    In a bowl, whisk together honey, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Reserve a little marinade for drizzling later.

      Marinate the Chicken:

        Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for extra flavor).

          Cook the Quinoa:
