1 pound baby carrots (or sliced regular carrots)

2 tablespoons unsalted butter

3 tablespoons honey

1 tablespoon brown sugar

1 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon ground cinnamon (optional)

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Carrots: If using regular carrots, peel and cut them into evenly sized sticks about 1/2 inch thick. If using baby carrots, rinse them under cool water and drain.

    Boil the Carrots: Bring a large pot of water to a boil and add a pinch of salt. Carefully add the carrots to the boiling water and cook for about 5-7 minutes, until they are just tender but still crisp. Drain and set aside.

      Make the Glaze: In a large skillet, melt the butter over medium heat. Once melted, stir in the honey and brown sugar, mixing until the sugar is dissolved. Add salt, pepper, and cinnamon (if using), and continue stirring well.

        Glaze the Carrots: Add the drained carrots to the skillet and toss them gently in the honey glaze. Cook for about 5-7 minutes, stirring occasionally, until the carrots are evenly coated and the glaze thickens slightly.
