1.5 lbs chicken thighs (boneless, skinless)

1/4 cup honey

1/4 cup soy sauce (preferably low sodium)

4 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

2 green onions (sliced, for garnish)

1 sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken:

    In a large bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, and red pepper flakes (if using). Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes to 2 hours for optimal flavor.

      Sear the Chicken:

        Heat a large skillet over medium-high heat and add a little oil if needed. Remove the chicken from the marinade (reserve the marinade) and place it in the hot skillet. Sear each side of the chicken for about 4-5 minutes until golden brown.

          Cook Through with Sauce:

            Once the chicken is nicely browned, pour the reserved marinade over the chicken in the skillet. Bring it to a simmer and reduce heat to medium-low. Cook for an additional 10-15 minutes, turning the chicken occasionally, until the sauce thickens and the chicken is fully cooked (internal temperature of 165°F or 75°C).
