For the Meatballs:

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions (plus extra for garnish)

2 cloves garlic, minced

1 egg, beaten

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

For the Honey Garlic Sauce:

1/3 cup honey

1/4 cup soy sauce

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

For Serving:

Cooked rice or quinoa

Steamed broccoli or your favorite vegetables

Sesame seeds (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Make the Meatballs:

        In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, green onions, minced garlic, beaten egg, salt, pepper, and paprika. Mix until all ingredients are well incorporated.

          Shape the Meatballs:

            Using your hands, form the mixture into small meatballs (about 1-1.5 inches in diameter). Place them on the prepared baking sheet, keeping a little space between each meatball.

              Bake the Meatballs:

                Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and cooked through (internal temperature should reach 165°F/74°C).

                  Prepare the Honey Garlic Sauce:

                    While the meatballs are baking, combine honey, soy sauce, apple cider vinegar, minced garlic, and grated ginger in a small saucepan. Bring to a simmer over medium heat.

                      Thicker Sauce:

                        Once simmering, add the cornstarch slurry to the sauce and stir continuously until the sauce thickens, about 1-2 minutes. Remove from heat.

                          Coat the Meatballs:

                            Once the meatballs are done baking, transfer them to a large bowl and pour the honey garlic sauce over them. Gently toss to coat all the meatballs in the delicious sauce.
