1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

2 large eggs

1/4 cup unsalted butter, melted

1 cup sweet corn (canned or frozen, thawed)

1/4 cup honey (plus extra for drizzling)

1 tablespoon unsalted butter (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to heat while you prepare the batter.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, eggs, melted butter, and honey until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Fold in the sweet corn.

          Heat the Skillet: Carefully remove the hot skillet from the oven using oven mitts. Add the remaining 1 tablespoon of melted butter to the skillet, swirling it around to coat the bottom and sides.

            Pour and Bake: Pour the cornbread batter into the hot skillet, smoothing the top if necessary. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Prepare Honey Butter: While the cornbread bakes, mix together 1 tablespoon of softened butter with 1-2 teaspoons of honey in a small bowl. Adjust the sweetness to your preference.

                Serve: Once cooked, remove the cornbread from the oven and let it cool for a few minutes. Drizzle with additional honey and serve slices warm, topped with your homemade honey butter.
