1 lb Brussels sprouts, trimmed and halved

3 tbsp olive oil

3 tbsp balsamic vinegar

2 tbsp honey

1 tsp Dijon mustard

1 clove garlic, minced

Salt and black pepper, to taste

¼ cup walnuts, chopped (optional)

¼ cup crumbled feta cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper. Toss well to ensure the Brussels sprouts are evenly coated with the mixture.

      Roast the Sprouts: Spread the Brussels sprouts onto the prepared baking sheet in a single layer. Make sure they are not overcrowded, which helps them roast evenly and become crispy.

        Baking: Roast in the preheated oven for about 25-30 minutes, tossing halfway through, until the Brussels sprouts are caramelized and tender.

          Add Walnuts: If using walnuts, sprinkle them over the Brussels sprouts during the last 5 minutes of roasting for a bit of crunch.

            Finish with Feta: Once out of the oven, transfer the Brussels sprouts to a serving bowl and if desired, sprinkle crumbled feta cheese over the top while still warm.

              Garnish and Serve: Garnish with freshly chopped parsley for a pop of color and flavor. Serve warm as a delightful side dish or a healthy appetizer.
