1 pound beef chuck, cut into bite-sized pieces

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 cups beef broth

2 cups egg noodles

1 cup carrots, sliced

1 cup green beans, trimmed and chopped

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

3 tablespoons cornstarch mixed with 3 tablespoons water (for thickening)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks and season with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

    Sauté Aromatics: In the same pot, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

      Build the Base: Return the seared beef to the pot. Pour in the beef broth, then add the carrots, green beans, thyme, and paprika. Stir well to combine.

        Simmer: Bring the mixture to a simmer and cover. Let it cook for about 30 minutes until the beef is tender, stirring occasionally.

          Cook the Noodles: After 30 minutes, add the egg noodles to the pot. Stir them into the broth and cover. Cook for an additional 8-10 minutes, or until the noodles are al dente.

            Thicken the Sauce: Once the noodles are cooked, stir in the cornstarch mixture to thicken the sauce. Allow it to cook for another 2-3 minutes until the sauce has thickened to your desired consistency.

              Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley for a touch of color and freshness.
