1 cup granulated sugar

1/2 cup light corn syrup

1/4 cup water

2 large egg whites (at room temperature)

1 teaspoon vanilla extract

1/4 teaspoon salt

Prepare Your Equipment: Make sure your mixing bowl and beaters are clean and dry. Any grease can prevent the egg whites from whipping properly.

    Cook the Sugar Mixture: In a saucepan, combine the granulated sugar, corn syrup, and water. Place the pan over medium heat and stir until the sugar dissolves. Bring the mixture to a boil and let it boil until it reaches 240°F (soft-ball stage) on a candy thermometer, about 6-8 minutes.

      Beat Egg Whites: While the sugar mixture is cooking, place the egg whites in a clean mixing bowl. Beat them on medium-high speed until soft peaks form. This will take about 3-4 minutes.

        Combine: Once the sugar syrup has reached 240°F, remove it from the heat. With the mixer running on low speed, gradually pour the hot syrup into the beaten egg whites in a thin stream. Be careful not to pour it directly onto the beaters as that can splatter.

          Whip Until Fluffy: Increase the mixer speed to high and continue to beat the mixture until it becomes thick, glossy, and holds stiff peaks, about 5-7 minutes. Add the vanilla extract and salt during the last minute of beating.

            Cool and Store: Once the fluff is ready, allow it to cool for about 10 minutes in the bowl. Transfer it to an airtight container. Marshmallow fluff can be stored in the refrigerator for up to 2 weeks.
