2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped

1/2 cup unsweetened cocoa powder

1/2 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1/2 cup shredded coconut (unsweetened)

1/2 cup dark chocolate chips

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dried fruit (raisins, cranberries, or apricots), optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking dish (8x8 inches) with parchment paper, leaving some overhang to easily lift the bars once set.

    Toast the Oats and Nuts: Spread the rolled oats and mixed nuts on a baking sheet. Toast them in the preheated oven for about 10 minutes, stirring halfway through until they are fragrant but not browned.

      Mix the Wet Ingredients: In a saucepan over low heat, combine honey (or maple syrup) and almond butter (or peanut butter). Stir continuously until the mixture is smooth and well combined. Remove from heat and stir in the vanilla extract and sea salt.

        Combine Dry Ingredients: In a large mixing bowl, combine the toasted oats, nuts, cocoa powder, shredded coconut, and dried fruit (if using).

          Combine Everything Together: Pour the warm nut butter mixture over the oat mixture. Mix well until everything is evenly coated. Fold in the dark chocolate chips gently to avoid melting them.

            Press into the Pan: Transfer the mixture to the lined baking dish and use a spatula or your hands to press it down firmly into an even layer. Ensure it is tightly packed for the best results.

              Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the edges are golden brown.

                Cooling Time: Remove from the oven and let the granola bars cool in the pan for about 10 minutes. Once slightly cool, lift the bars out using the parchment overhang and let them cool completely on a wire rack.
