1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup buttermilk

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 cup shredded carrots

1 cup crushed pineapple, drained

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easy removal.

    Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

      Mix Wet Ingredients: Add the eggs, one at a time, beating well after each addition. Then mix in the buttermilk and vanilla extract until fully combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and shredded carrots. Gradually add this dry mixture to the wet ingredients, mixing just until incorporated.
