1 cup (200g) granulated sugar

1/2 cup (100g) packed brown sugar

1 cup (240ml) unsweetened applesauce

1/2 cup (120ml) vegetable oil

1 tablespoon vanilla extract

1 1/2 cups (190g) all-purpose flour

1 cup (85g) unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (240ml) boiling water

Optional: Chocolate chips for extra fudginess

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the granulated sugar, brown sugar, applesauce, vegetable oil, and vanilla extract. Mix until smooth.

      In a separate bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.

        Gradually add the dry ingredients to the wet ingredients, mixing well until combined. The batter will be quite thick at this stage.

          Carefully stir in the boiling water into the batter—this will help create a rich, fudgy texture. Mix until smooth. If using, fold in chocolate chips at this stage.

            Pour the batter into your prepared cake pan and smooth the top using a spatula.

              Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

                Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                  Once cooled, you can frost with your favorite chocolate ganache or serve as is with a dusting of powdered sugar.
