Homemade Chicken Noodle Soup

1 lb boneless, skinless chicken thighs

8 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and black pepper, to taste

2 cups egg noodles

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional, for brightness)

Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken thighs and season with salt and pepper. Sauté for about 5-7 minutes, until the chicken is browned on both sides. Remove the chicken from the pot and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until the vegetables soften. Stir in the garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Return the chicken to the pot, add the chicken broth, thyme, rosemary, and bay leaf. Bring the mixture to a boil.

        Simmer the Soup: Reduce the heat to low, cover, and let it simmer for about 20-25 minutes until the chicken is cooked through.

          Shred the Chicken: Remove the chicken from the pot, shred it with two forks, and return it to the soup.

            Cook the Noodles: Stir in the egg noodles and cook according to package instructions (usually about 8-10 minutes), until tender.

              Final Seasoning: Season the soup with additional salt and pepper to taste. If desired, add a splash of lemon juice for brightness.
