1 large egg yolk

2 cloves garlic, minced

2 anchovy fillets, minced (or 1 teaspoon anchovy paste)

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon fresh lemon juice

1 cup extra virgin olive oil

1/2 cup freshly grated Parmesan cheese

Salt and black pepper to taste

Optional: 1 teaspoon capers, rinsed and finely chopped for extra flavor

Prepare the Base: In a medium bowl, combine the egg yolk, minced garlic, anchovy fillets or paste, Dijon mustard, Worcestershire sauce, and lemon juice. Whisk together until well combined.

    Emulsify the Dressing: Slowly drizzle in the olive oil while continuously whisking. This will help to emulsify the dressing, creating a smooth consistency. You can also use a hand blender or food processor for this step if you prefer a creamier texture.

      Add the Cheese: Once the oil is fully incorporated and the dressing is emulsified, fold in the grated Parmesan cheese. You can reserve a bit of cheese for garnish if desired.

        Season to Taste: Add salt and black pepper to taste. If using, stir in the capers for an added layer of flavor.
