1 tbsp granulated sugar

1 cup unsalted butter, chilled and diced

6 to 8 tbsp ice water

6 to 8 medium Granny Smith apples, peeled, cored, and sliced

¾ cup granulated sugar

¼ cup brown sugar

2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tbsp lemon juice

2 tbsp all-purpose flour

1 tbsp butter, to dot on the filling

For Assembly:

1 egg, beaten (for egg wash)

1 tbsp sugar (for topping)

Instructions
 

Make the Pie Crust:

    - In a large bowl, mix the flour, salt, and sugar together. Add the diced butter and mix using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

      - Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough into two halves, form into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

        Prepare the Apple Filling:

          - In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss to coat evenly and let it sit for about 15 minutes to allow the flavors to meld.

            Assemble the Pie:
